Color, Marbling, and Firmness Characteristics of Pork Loins from Growing-Finishing Pigs Supplemented with Conjugated Linoleic Acid

چکیده
and Implications A study was initiated to research the efficacy of feeding conjugated linoleic acid (CLA) to market barrows to achieve improvements in growth, carcass, and pork quality characteristics. The feeding of CLA at a constant level (0.75%) from 40 kg to 115 kg of body weight resulted in a significant increase in subjective marbling scores and tended to increase subjective firmness scores of loins from CLA-treated pigs compared with loins from pigs on the control diet. No Hunter color differences were observed when day of shelflife was evaluated in the statistical model. Hunter color values were analyzed independent of day. No differences were observed for L* and a* values. A significant difference (P< .05), however, was observed for b* values indicating a more yellow product from CLA supplementation.

Nutritional influences on pork quality
This paper reviews the literature relating to the potential impact of swine nutrition on pork quality attributes. Supra-nutritional levels of vitamin E have been shown to increase muscle vitamin E content and reduce lipid oxidation; however, the impact on muscle color and water holding capacity has been variable. Selenium is also potentially involved in reducing lipid oxidation; there is no evi...
متن کاملBody Composition and Sensory Characteristics of Pork from CLA-Fed Pigs
and Implications Conjugated linoleic acid (CLA) improved carcass characteristics of pork by decreasing backfat and increasing fat hardness (firmness). CLA also improved the color of pork loin chops and patties both initially and over retail storage time. Combined, these carcass composition and sensory characteristic improvements could provide processors and consumers a more desirable product. T...
متن کاملFeeding conjugated linoleic acid partially recovers carcass quality in pigs fed dried corn distillers grains with solubles.
Dried corn distillers grains with solubles (DDGS) fed to swine may adversely affect carcass quality due to the high concentration of unsaturated fat. Feeding CLA enhances pork quality when unsaturated fat is contained in the diet. The effects of CLA on growth and pork quality were evaluated in pigs fed DDGS. Diets containing 0, 20, or 40% DDGS were fed to pigs beginning 30 d before slaughter. A...
متن کاملInjection of conjugated linoleic acid into beef strip loins.
Beef strip loins (IMPS 180; n=15) were sectioned in thirds and sections (n=45) were left untreated (CNT) or injected with either a commercial powder conjugated linoleic acid (CLA) source (Powder) or a commercial oil CLA source (Oil), whose major isomers were 18:2cis-9, trans-11 and 18:2trans-10, cis-12 CLA isomers. Fresh Oil steaks had 3.20 and 3.15, Powder steaks had 4.67 and 4.62, and CNT ste...
متن کاملImprovement in the carcass traits and meat quality of growing-finishing Rongchang pigs by conjugated linoleic acid through altered gene expression of muscle fiber types.
A total of 160 Rongchang pigs (26.76±1.78 kg) were randomly assigned to 5 dietary treatment groups until their body weight (BW) reached 90 kg. The diets were supplemented with 0, 0.5, 1.0, 1.5, and 2.0% conjugated linoleic acid (CLA). Our results showed that the 1.0 to 2.0% CLA-fed pigs had less back fat deposition when their BW reached 90 kg than the pigs that received less than 1% CLA. During...
